Burger Salad with Air Fryer Potatoes
Get ready for a tasty twist on burgers with this Burger Salad recipe! This recipe literally came together because we didn’t have any burger buns (and I truthfully don’t love GF burger buns anyway), and we had a TON of lettuce that needed to be eaten stat 😂 . But a happy accident it was, so here we go!
Here’s what you need:
Salad:
8 cups chopped romaine lettuce (2 heads/470 grams)
2 cups cherry tomatoes (or sliced beefsteak tomatoes), halved (300 grams)
1/2 cup pickle chips
1/2 cup sliced red onion (65 grams)
Beef:
1/2 tablespoon avocado oil
1 pound ground beef (85/15 recommended)
1 cup diced yellow onion (120 grams)
1/4 cup shredded garlic
Salt and pepper, to taste
Potatoes:
Small Potato Medley
2 tablespoons avocado or olive oil
Salt and garlic powder, to taste
Here’s what you do:
Chop up romaine lettuce, cherry tomatoes, red onion, pickle chips, jalapeno, and avocado. Optionally, add some shredded cheese for extra flavor.
In a skillet, cook ground beef with onions, mustard, salt, and pepper until browned and flavorful.
Meanwhile, slice up small potatoes into thin slices (you can use a mandolin like this if you want to make it easier). Spread the thin slices out across the air fryer pan. Pop ‘em in for 20 minutes at 400 degrees (F).
To assemble the salad, divide the lettuce, tomatoes, onions, pickles, avocado, jalapenos, cheese (if desired), and ground beef into bowls. Drizzle the special sauce dressing over the top.
