The Easiest Shredded Chicken You’ll Ever Make
You know I’m not a huge fan of meal prepping for the entire week on one day
call me crazy, but eating 4-day old veggies and meat just stopped sounding appealing after a while
BUT I also recognize how important it is to have some things pre-made for the super busy days (so we can stop ordering in when we have a fridge full of ingredients)
This shredded chicken recipe is one of my all-time favorites because of how easy it is to make, AND how versatile it is to pair with
Here’s what you need:
2 lbs Chicken (you can use breast, thighs, quarters, whatever you want!)
2 cups Carrots (or 2 large carrots) cut in big pieces
1 cup Onions cut in big pieces
1 container of Kettle & Fire Bone Broth (or any bone broth)
Salt, Pepper + Spices (we use REP Provisions Chicken Seasoning)
Slow Cooker (crockpot or instant pot) OR a big pot to use on the stove
Here’s what you do:
>> Cut up onions & carrots and throw half into the bottom of the pot. Layer chicken on top, then cover with the rest of the veggies.
>> Add broth to the pot, then add water until the mixture is completely covered in liquid.
>> Add salt, pepper + spices- I used 2tbsp salt, 1tbsp pepper, and 3 tbsp REP Seasoning
>> Cook on high for 4-6 hours.
I will say, you can make this shredded chicken with just water if you don’t have broth, and I would definitely recommend to cook it longer, and add more seasoning.
You can use this chicken to make tacos, or mix it with a low-sugar BBQ sauce (we like The New Primal) to make pulled chicken!
